Entomatadas Language (Language of tomato sauce)

Not a spoiled child in every way that draws the line at certain things and see my mother picking up another layer of scum the way cows tongue boiling on the stove, I knew "was in difficulties.

"But I hate the mother tongue!" It was usually my response as I left the kitchen in tears, a lot of joy to my sister who loved things.

Unfortunately for my sister, things changed. After cycling the day in the Andes, where the language was almost always on the menu in restaurants on the hill of my arrival, I know that love matters. The only problem is finding the language in a restaurant, let alone a store in this country is now almost impossible.

In England, our feed is almost exclusively limited to what supermarkets decide is "fine cut" and then you can imagine my joy when I learned your language from the menu on Parrillada del Sur, a Bolivian coffee hidden in darkness the old road to Kent. If you ask your butcher though they sell you a beef tongue for a few pounds, so here's a recipe, then you have no excuse but to give it a try.

* 1 beef tongue

* 4 fresh tomatoes (a can)

* Salt and pepper to taste

* Half an onion, finely chopped

* Three cloves garlic, minced

* Bacon dripping or cooking oil

* Coriander / cilantro, finely chopped

First Boil the beef tongue in salted boiling water until tender (about 3-4 hours) to remove any scum that forms on the surface with a slotted spoon.

Take your second language and when sufficiently cooled remove skin and cut into thin slices

3. Now, Peel and dice the tomatoes, garlic and onion and sweat in a little 'dripping of bacon (cooking oil will do) and 10-20 minutes, until sticky and rich. Season well.

4. Place the slices on a spit of ions and our apartment over the sauce. Sprinkle with cilantro and garnish with some spring onions and diced red tomatoes, minced fresh.

5. Serve with rice and boiled potatoes.
